Grilled Artichoke with Red Pepper Aioli Sauce

Ingredients

1 artichoke (large size)
1 cup red pepper aioli sauce (see recipe)
2 qt water
2 cups red wine vinegar (Regina brand recommended)
2 tbsp steak seasoning mix –
2 parts granulated garlic, 1 part kosher salt, 1 part ground pepper
2 tbsp olive oil

Aioli

2 cups mayonnaise
1 lb red peppers
1/3 cup garlic, chopped
1/2 tsp lemon juice
 
Preparation

Artichoke
1. Clean artichokes by cutting of the stem and sharp points of the leaves.
2. Steam the artichokes for 25-30 minutes using a mixture of 2 quarts of water and 2 cups of red wine vinegar. When the artichoke is done steaming, place it in the refrigerator to cool.
3. After cooling, cut artichokes in half from the top down the middle and scoop out the flower hairs.
4. When ready to serve, take artichokes and drizzle with olive oil, red wine vinegar and sprinkle with the steak seasoning mix. Place the open end of the artichoke on the grill, cook for about 2-3 minutes on each side.  
5. Prepare the aioli dipping sauce and serve.
 
Aioli
1. Roast the peppers, peel, seed and puree in blender. Add the puree to the mayonnaise. Mix in garlic, lemon juice and season with salt and pepper.
