 If there is one thing you do this fall, I suggest you attend one of the wine classes at Eno, the Ritz-Carlton, Laguna Niguel's upscale tasting room.
Eno-Versity gives wine lovers the opportunity to taste a number of selections through different themed classes. I attended the California Cabs session in August, and it was an enlightening experience.
The class featured three 2005 vintage selections from Rodney Strong, Mount Veeder and Beaulieu Vineyard (more casually know as BV).
"There were no heat spells in 2005, so the grapes were able to ripen nicely on the vine," says Shannon Latting, who led the session with Michael Villas.
Guests can choose either a cheese or a chocolate plate for an additional fee. My guest and I tried the cheese platter, which featured Serena, Fiscillini Bandaged Wrapped Cheddar and Sonoma Dried Jack – and when paired with the wine, it was a to-die-for combination.
Though California Cabs won’t be a featured session again this year, there are a number of other classes to attend. Here's a breakdown:
