Salmon Ciao Bella 1 serving
Ingredients 8oz Wild salmon filet boneless and skinless 1 Sliced garlic clove 1 oz Thinly chopped sweet Maui onion 1 Teaspoon parsley chopped 1 Teaspoon minced celery 3 Thin slices of Ginger 2 oz Fumet (fish stock) 1 Tablespoon sliced mushrooms 2 Pre blenched asparagus 3 Cherry tomatoes cut in half Salt and pepper to taste
Preparation
- Place saucepan over medium heat. Add extra virgin olive oil, garlic, onion, celery, parsley, and ginger and sauté for one minute. Stir gently to avoid burning.
- Add salmon fillet to pan and sear the top side down for about 1 and 1/2 minutes.
- Flip the salmon fillet and sear the other side for 1 and 1/2 minutes.
- Add mushrooms and asparagus, season with salt and pepper and toss.
- Add tomatoes and fumet. Cover with a lid and let it simmer until vegetables become soft.
- Place in a preheated oven at 380 degrees for 10 minutes.
