 True Food Kitchen is slated to open at Fashion Island on Aug. 2. Developed by Fox Restaurant Concepts and best-selling health-living author Dr. Andrew Weil, the eatery will offer a menu of fresh, local ingredients and an atmosphere that nourishes the mind, body and spirit.
The 7,200-square-foot store marks the first location in the state for Fox Restaurant Concepts, which owns 12 concepts in Arizona, Kansas, Texas, Colorado – and now California.
The eatery boasts room for more than 250 guests, with two communal tables and a 2,700-square-foot outdoor patio, as well as a private dining room. Additionally, True Food will feature eco-friendly décor, complete with low-voltage LED lighting, low-VOC paint, white oak butcher-block tables and Caesar stone quartz counters, among other elements.
The most important part? The Mediterranean-, Asian- and Californian-inspired menu, which was developed by Executive Chef Michael Stebner. Among the selections: Sashimi Tuna Salad with avocado, cucumber, tomato, edamame and ginger; Curry Chicken with rice noodles; Grilled Wild Ahi Sliders with wasabi; and Wild Smoked Salmon with shaved radishes.
Additionally, True Food Kitchen will offer catering, takeout, a selection of coffee drinks, natural juices, organic and low-calorie beer and sake – and a collection of wines selected based on wineries' commitment to sustainable farming methods.
True Food Kitchen will be located at 451 Newport Center Drive, next to Roy's Hawaiian Fusion Cuisine and Fleming's Prime Steakhouse. The store will be open from 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday, 8 a.m. to 11 p.m. Saturday and 8 a.m. to 9 p.m. Sunday.
